Developed in Louisiana, Murasaki sweet potatoes are an excellent source of vitamin A, and a good source of potassium, dietary fiber, and vitamin C. They also contain iron, calcium, protein, and beneficial amino acids. Some may regard sweet potatoes as too starchy, but their high fiber content makes them a slow burning starch—meaning they won’t spike blood sugar and insulin levels. In addition, Murasaki sweet potatoes are medium to large in size with a white to pale yellow flesh that is a bit drier than other varieties. When cooked, Murasaki sweet potatoes have a slightly sweet taste with a robust nutty flavor, which is why they can be baked, boiled, roasted, or sautéed.
