Covington sweet potatoes are a new variety developed in North Carolina by scientist Henry M. Covington in the early 2000s. As a matter of fact, these sweet potatoes are an excellent source of vitamin A, vitamin C, iron, calcium, and fiber. As a matter of fact, vitamins A and C are vital for supporting immune function, which is especially important during cold and flu season. Besides, Vitamin A is also key for maintaining healthy skin, vision, and organ function. What sets Covington sweet potatoes apart is the fact that they are small to medium in size, and are long, slender, and oblong in shape. Their flesh is firm, dense, and offers a malty sweet flavor, making Covington an excellent choice for roasting or baking in traditional sweet potato casseroles.
