Made from ground oats, oat flour has a superfine, even fluffy texture, not to mention that its sweet flavor makes it “one of the most approachable ‘whole grain’ flavors.” In addition, oat flour is gluten-free and therefore, it is perfect for people on a gluten-free diet. However, this variety can leave your baked goods heavy or crumbly. So you might need to add more liquid. Or, if you aren’t gluten-free, it is recommended that you use oat flour in conjunction with a high-gluten variety, such as bread flour. You can, of course, make this flour at home. Just grind dried oats in your food processor or blender until they become a fine powder. Bear in mind that each 1¼ cups of oats will yield 1 cup of oat flour.
