Yellow Creamer pretty much resembles its white "twin", except its skin is tan to light gold. Besides, these potatoes are an excellent source of vitamin C, fiber, potassium, and flavonoids such as anthoxanthin, which gives them their yellow color and provides some antioxidants. As a matter of fact, Vitamin B6 in all potato varieties plays numerous roles in our nervous system, many of which involve neurological (brain cell) activity. And as far as cooking is concerned, Yellow Creamers are best suited for cooked applications such as roasting, boiling, mashing, or grilling. In fact, their waxy texture makes them especially ideal for potato salads or placed into soups, stews and curries.
