Purplette scallions, also known simply as purple scallions, are mild and sweet-flavored. Harvested with its contrasting green top, this little onion is ready to eat when it is anywhere between the size of a nickel and a quarter. You can use it to enhance fresh mixed green salads with its excellent flavor. You can also sauté or roast the whole scallion, and then serve it as a tasty and complementary garnish for grilled, roasted or sautéed meats. It is worth noting that extracts of onions, garlic, and their relatives have long been used as medicine. They can kill bacteria, fungi, and viruses. Lab tests on certain varieties of onions showed that at high enough concentrations, some can kill or slow the growth of salmonella or E. coli.
