Chinese scallions are bulbs with green shoots that resemble garlic. These bulbs grow to around 1.9 centimeters in diameter, and have a cream-colored inner and outer skin. Besides, this Chinese variety has a crisp texture and bite, and a flavor akin to onion, with notes of garlic and cabbage. As a matter of fact, the biggest nutritional difference between scallions and shallots is the amount of vitamin K they contain. Thanks to its edible green leaves, one large raw scallion provides 43% of the recommended daily intake of vitamin K, which in turn is essential for blood to clot properly, and also helps maintain the density and strength of your bones.
