Very little is known about the origin of Rubidoux pomelos, yet they are mostly found today in Southern California. These pomelos are large and round, and have a thick, bright yellow rind and a juicy, albeit very seedy flesh. As for their flavor, it is actually sweet with low acidity and little bitterness. Nutrition-wise, Rubidoux pomelos contain high amounts of vitamin C, potassium, dietary fiber, vitamin B6, and magnesium. They also contain an enzyme called carnitine palmitoyl-transferase, which can be helpful in weight loss.
