Chidori Kale

This vibrant plant, along with other decorative kale varieties, was most likely developed in Japan. It is a medium sized kale with extremely beautiful leaves that are rich shades of solid fuchsia and magenta. In addition, Chidori has a chewy texture and a very robust cabbage flavor, especially when eaten raw. Nutrition-wise, this variety is an excellent source of vitamins A and C, iron, calcium, beta-carotene, magnesium, potassium, protein, carbohydrates and dietary fiber. In fact, kale also contains substances that bind bile acids and lower cholesterol levels in the body. When it comes to cooking, Chidori may be used similarly to other purple or green varieties, but it is rather prized for its visual appeal as a raw garnish that is mostly used as an attractive addition to mixed green salads.
