The reddish orange color of these tiny lentils turns golden once they’re cooked. In fact, these lentils cook quickly and generally lose their shape in cooking. As such, they are good for soups, stews, and pureed side dishes. Nutrition-wise, lentils are a great source of folate and magnesium, which are big contributors to heart health. Folate, for instance, lowers our homocysteine levels, a serious risk factor for heart disease. Magnesium, on the other hand, improves blood flow, oxygen and nutrients throughout the body. As a matter of fact, low levels of magnesium have been directly associated with heart disease, so eating lentils will keep our hearts happy!
