Vegetables with purple pigmentation, such as Redbor kale, are actually rich in anthocyanins and other phyto-chemials that are known to fight cancer. Considered a “superfood” by some, Redbor kale also contains some of the highest anti-oxidant levels of many other fruit or vegetable. Besides, this variety is prized for its vibrant purple and magenta colored leaves that offer a mild cabbage-like flavor and crisp texture. Redbor kale may be used similarly to other green varieties; however, it does lose some of its intense pigmentation when cooked. In fact, its bright magenta color is best retained if left raw, but it should be finely shredded to mitigate its hardy texture.
